Recipe share: Coconut cashew bites

Here’s a really simple and quick recipe for sweet, energy-packed cashew nut and coconut bites that Steph shared recently.

These are perfect little balls of energy for before, during (wrap ’em up and pop in your bag) or after exercise (delicious with a cuppa) and full of good ingredients.

You just need a food processor and you can whip these up in less than ten minutes and store them in the fridge for when you need a pick-me-up. Simples.

Ingredients

130g cashew nuts

10 pitted dates, soaked in hot water (keep water to add later)

30g nut butter

Half tsp ground ginger

Half tsp sea salt

2 tbsp golden syrup

40g coconut flakes

 

Method

  1. Soak dates
  2. Grind cashews (blitz in food processor or coffee grinder)
  3. In food processor blend the soaked dates (drained), cashews, nut butter, ginger, salt and golden syrup. The mixture should come together into a ball, if not add a tbsp of the date water and blend again.
  4. Place mixture into a bowl and stir in the coconut.
  5. Roll into balls (makes 15 bite size)

Let us know if you make these or get creative and add or substitute a few ingredients – I think a little cinnamon or cocoa would be nice as well or instead of ginger and even some cacao nibs if you wanna get really fancy and add some crunch. Enjoy!

    These look delicious! Whenever I make something like this they don’t last very long! I quite like cocoa and a little mint.
