Vegan spiced apple cake recipe

Last Friday evening I got the urge to bake and found a recipe that required minimal effort but delivered maximum results, a perfect combo so I thought I’d share. Get baking this weekend!

The recipe is a Jamie Oliver one, I just switched up the cake tin that I made it in and used up the ingredients in my cupboard instead of following the recipe exactly. It took me about 15 minutes to prepare and 30 minutes baking time in the oven, so can be done in less than an hour which is great.

Ingredients
For the sticky toffee apple base

25 g vegan margarine (I like Flora but choose any dairy-free spread)

85 g brown sugar (the recipe calls for muscovado but use what you have)

1 thinly sliced Cox apple (or any apple variety that you can eat raw, Braeburn, Gala etc.)

 

Cake
Dry ingredients

180 g plain flour

110 g brown sugar

1 tsp bicarbonate of soda

1 1/2  tsp mixed spice

85 g walnuts, roughly chopped

 

Wet ingredients

80 ml sunflower oil

180 ml cold water

1 tsp vinegar (I used white wine, but apple cider would work)

2 Cox apples, grated

Zest of 1 lemon

Method:
For the sticky toffee apple base

Melt the butter and sugar in a pan on a low heat to make a caramel, this takes a few minutes. Pour into the cake tin and arrange apple slices on top.

For the cake
  1. Preheat oven to 180° C / 350° F. Grease or line a cake tin (one that can show off your sticky apples)
  2. Combine the dry ingredients (minus the walnuts) in a large bowl.
  3. In a separate bowl, combine the wet ingredients, then add the wet to the dry and stir through.
  4. Stir in the walnuts.
  5. Add the cake batter to the top of the layer of the apples in the tin, spread out to edges.
  6. Bake for 30-35 minutes until a skewer comes out clean, then leave to cool for 5 minutes before turning out and revealing the glory!
